Academic research investigated how Canadian colleges and universities have seen a steady increase in enrolment over the past decade, driven mostly by interest from international students. During this growth, if any of these students experience a language barrier this would pose a significant threat to classroom equity. This qualitative research study sought to understand how real-time digital language translation technology could bridge that language barrier. Professors’ lectures were translated, in real-time, into students’ first languages utilizing the Microsoft Translator app.

Another research project explored food and wine pairing. I wrote this manual for college hospitality students and beverage retail staff. It teaches readers how to think critically about the ingredients and flavours of food and how they interact with the ingredients and flavours of wine. The underlying message shatters the old adage of red wine with red meat and white wine with fish, replacing that with a flexibility that allows for hospitable service.
